Christmas Rum Balls

I must admit to being a bit of a Christmas Grinch, but my Mum visiting from Queensland and the mention of her rum balls got me in a more festive mood today. What are we going to do with the remaining Bundy Rum? Merry Christmas everyone - hope you are making lots of travel plans over the holidays.


Here is the video and Mum's recipe below....


Ingredients:

  • 3/4 cup sultanas

  • 1/4 cup rum

  • 1 tin sweetened condensed milk (250 ml)

  • 1/4 cup desiccated or shredded coconut and a bit more to roll the balls in

  • 2 1/2 tablespoons coco

  • 10 wheatbix

Method:

  • Marinade sultanas overnight in rum.

  • In a large bowl crush wheatbix with fingers or using end of rolling pin

  • Add coco and coconut and mix together.

  • Add sultanas and sweetened condensed milk and mix very well.

  • Put in fridge for at least 1 hour.

  • Using a teaspoon, take a portion of the mixture and form into a tight ball using your hands.

  • Roll balls in extra coconut and put in a container that is stored in the fridge.

  • Enjoy!
